Notes: This is a simple cider. For springtime I'm going to use Apple and Raspberry juice from Chegworth Valley here in the UK as they sell their juices in decent homebrew quantities (10L bag-in-box) and don't use any of the sorts of preservatives that would kill the yeast (just ascorbic acid AFAICT).
Tannin will be added for bite, and pectolase to clear. Malic acid and precipitated chalk will be used to adjust the acidity if necessary, and glucose syrup to up the OG if necessary, to reach the target ABV of around 5.5 - 5.9%.
The results will be force-carbed in a keg.
The last batch (autumn cider made from Cox/Bramley juice from the same farm) was delicious and went down very quickly. |

INGREDIENTS
• Start with the following initially in the fermenter:
- (3) gallons preservative-free apple juice
- (1) pack US-05 yeast
• After 12 days add:
- 2.5 lbs. defrosted and squished formerly frozen mixed berries
• After another full week crash for 2 days after adding to the fermenter:
- 0.3 tsp potassium metabisulfite (Campden)
- 1.5 tsp potassium sorbate
• After crashing, add to the keg before transferring and carbonating:
- 9.0 ml 88% lactic acid
- (2) cans room temperature apple juice concentrate

Notes: Kettle soured. 10 minute initial boil to sanitize, cool to about 90 degrees and add lactobacillus. Sour for as many days as desired, re-boil for an hour where the hops are added and then continue fermentation as usual.

Steep chocolate malt in 1 gal of water in a separate pot for 30-45 min at 152 degrees F while heating boil water. Strain and sparge with another 1 L of 160 degree water and add to boil water
Late additions at 15 min
I put the whole cherries in the boil. After the wort is cooled I strain the cherries out using a colander while transferring from the kettle to primary.
Need about 450B yeast cells.

4-6 weeks secondary (I age 10 weeks in a whiskey barrel)
