Notes: Attempt #2 at making a Total Domination clone.
This is an enjoyable, slightly floral IPA. It is not Total Domination though. EDIT - this turned out to be a delicious beer that I'm very happy with, but I will continue to refine the recipe.
The grain bill on this is just about perfect. The hops are off though. Too floral, not enough bitterness. I'm going to add Simcoe as a bittering hop and as a late add, and cut back the amarillo/crystal additions by 25%.
The home brew store was out of Wyeast 1968 so I went with Denny's Fav 50 and I'm very happy with the clarity and flavor profile, leaves a bit of maltiness which is nice.

Notes: Double decoction:
Dough in grains into 105F water and rest at 95F for 15 min. Then add 178F water to mash to bring temp up to 122F for 15 min. Then remove 1/3 of mash with slotted spoon into a separate pot (first decoction) and heat to 155F for 15 min. Then heat decoction up to a boil (stirring regularly). Add first decoction back to main mash, bringing the combined temp to 152F for 20 min. Then remove 1/2 of mash (with liquid this time) into a separate pot (second decoction) and heat to boil. Then return decoction to main mash for a final rest at 165F for 10 min. |

Notes: Tweaked from candisyrup recipe (OG1064, FG1008, SRM29, IBU24, VOL5GAL/19L). 90 minute boil, subbed styrian goldings with fuggles. Chill to 18C. Oxygenated 20 mins with air stone.
Mash water @4L/kg so not counting candisyrup (added just before flame-out) used 20L. Also sparged with 10L @approx 75C so total water used 30L and ended up 18L in fermentor (around 1 L of trub left when racking. OG reading @35C was 1076 (so with temp adjustment +0.005 closer to 1081). Therefore seems efficiency @80%. FG is 1016 at 21C so closer 1017 equals about 8.5%
Ramped up primary slowly to 26C over 9 days as bubbling started to slow (optimal lower & upper limits of wyeastlab3787 trappist-style high-gravity is 18-26C). (Optional didnt do is rack to secondary. At FG crash to 10C for 5 weeks to brighten). Bottle prime with Simplicity Candi Syrup at 32g/gallon. I used regular table sugar at 6-8g to get 3-4vol CO2 as per westmalle guidelines. Used 125g for the 17.5L. Hold bottles at 24C for 2 weeks for initial carbonation. At 1 week there was little carbonation so gave shake and up to 25C. Plan cellar 6 months |

Notes: This recipe follows closely to a Black Butte Porter clone recipe with minor adjustments.
Nibs and oak chips are negligible. Add to taste.
---Batch 1: 8/3/2013---
- Substitutions: Warrior for Nugget. Belgian chocolate for American chocolate. 120L for 90L.
- No starter- 2 vials instead
- Crap. I got Flaked Wheat vs Malted Wheat. I'm not actually sure they had malted wheat. I changed the recipe to account
- 1 week: After a week it's done fermenting (it fermented HARD for a couple days). FG is at 1.016 (estimated since I never took an OG).
- Added only 6oz of the cocoa nibs. It already smelled so chocolate'y.
- Added the 8oz of extracted oak chips and a vanilla bean.
- 2 weeks later: FG still at 1.016. Hydrometer tasting was amazing. Kegging.
- VERDICT: Perfect. If anything, it tastes a tad sweet. Almost like a lacto stout. But that is probably fine for a crow pleasing beer.

- This time I used malted wheat (not flaked) but had to sub UK chocolate for another 4oz of regular chocolate. Ah well.
- Spices: 8oz cocoa nibs, 4oz of med toast french oak soaked in whisky and rum (I divided those up into 2 equal bowls and put plastic wrap around the top. Will extract for 2 weeks then add to primary and let it sit for another week in the fermentor.
- OG: 1.059 (refractometer)
- 12-17-2013 Added chocolate & wood. FG: 1.016 (hydro)
- Tasting notes: Oak chips were too overwhelming. Man, chips suck. And 8oz is waaay too much. Half that would have been better.
