looks good. I make a schwarztsthe beer for about 2/3 of the year its one of my favorites.

I might go a little darker on the overall color. I shoot for >28 srm.

Why use midnight and debittered carafa 3? same with the late mash addition??

I will go through and simplify it before i brew it again...but as is, its really good.
 
Should be good! I would think that with those late mash additions you should avoid it being overly roasty or harsh/bitter. I rather like the recipe! Please let us know how it is, I may want to brew it!

gotcha! i love complexity! I like Spec X and Brown malt for that in dark beers. I think that they add a bunch of flavor without being just straight black malt bitterness.
 
OK, based on your suggestions, I bumped the dark malts up to bring it to 28 SRM.
I'll brew this late next week with the yeast coming off the Helles I brewed yesterday. 2nd Gen yeast preforms so well!
