3 gallons Heritage Orchard Cider
3 cans apple cider concentrate with ascorbic acid
pH 3.3
OG 1.058
Added pectic enzyme the night prior to pitching.
Made a yeast starter following the package directions but used a pint of apple cider from the half gallon of cider instead of water. Heated to 75F and pitched. Set it in the media closet for an hour before pitching.
Cider temp 65F at time of pitch.
