Notes

0 cane sugar. Had to add a fermentable to save recipe.

5 gallons of water from Walmart water refillable jugs.

4 lemons juiced with citrus juicer. Approximately 7 oz.

2 small spoon fulls of citric acid from canning section

2 oz Approximately lactic acid

Taste tested for slight sourness like a berliner.

Boiled 5 minutes, then added lemon peels/zest and pineapple cores and scraps. I cut the outer part of the pineapple off, rinsed with water, then cut "eyes" off thinly around outside edge. This part would normally be discarded but will provide juice and flavor the water like a tea.

Boiled additional 5 minutes and begin to cool to 170/175 for whirlpool hop additions. Add hops and whirlpool for 20 minutes. Cool as low as possible and transfer to a keg.

Carbonate once cooled and shake to force carb. Can also use soda stream for fast carb.
