Initial mash temp was 146-147. Let it ride for a while at that temp and then added 200 degree water after about 30 minutes to raise it to 152. Mashed out at 168. |

Did not have Hersbrucker hops so used Saaz instead. Added 1.5 oz Saaz at 5 minutes. Added .5 oz Saaz at 165 in the whirlpool for 10 minutes. |

Cooled to 66. By the time I pitched it was at 68. Dropped it to 67 in the fermentation chamber and will let it sit there for 8 hours or so and then will allow to free rise to 68. |

Woke up to find no activity at all coming from fermenter. Picked up lid and found that the krauesen had reached to near the top, so fermentation was certainly happening. Reset the lid and moved the 90 degree airlock port a bit and bubbles immediately started coming out. |
