Replaced Chinook hops with simcoe

dry hopped at high krausen with 1.5 oz simcoe, 2 oz mosaic
fermenting p slow @ 65 degrees

15 grams gypsum
10 grams CaCl

Yeast Starter:
202 grams of DME for starter OG of 1.037. 2L total volume
Yeast is a few months old, not ideal.

6/13/2020 brew day
Used El dorado in place of mosaic. Will be dry hopping with citra only.
OG 1.068
v bitter, more orange color than last batch which was creamier.

yeast showing activity next morning! healthy rhythm of bubbles. no blow off as of 6/15.

Sub'd Galaxy for Citra
reduced per AA counts

Spilled 16 oz of mash which reduced the OG by 0.03???
OG was 1.045 which wasn't ideal.

I might have counted the flaked oats as fermentables when calculated strike water which thinned the mash out too much.

over carbonated in keg.

Bottled turned out well.

5/30/21
mashed was a bit cold at 145°, external temps were ~45° and the strike water poured slowly and I didn't premeasure my grains. Will have to remember that for next time.

Strike water 6 gallons

Added about 1 gallon of hot water to mash.

Warmed up to 150 by end of starch conversion.

Sparged at 150°.

increased whirlpool hops to 2 ounces each.

OG 1.061

Dry hopped with 2 oz citra at high Krausen

Finished at 1.011

dry hopped with 2 oz mosiac after primary

racked without O2 exposure

WaaaaYyyy too bitter

Not sure what happened but it cold crashed and became pretty clear...Not hazy at all.

almost drank like a west coast IPA and was very dark...
