Plan to use distilled water from Kroger. I will start the boil with 2 gallons and then add the rest to the fermentation buckets. 2 tsp. of baking soda will be added to the boil after steeping grains to reduce acidity.
Quick Water Requirements
Water Gallons  Quarts
Heat water added to kettle (equipment estimates 4.5 g | 18 qt) 1.96 7.8
Mash volume with grains (equipment estimates 4.5 g | 18 qt) 2.07 8.3
Grain absorption losses (steeping) -0.18 -0.7
Volume increase from sugar/extract (early additions) 0.22 0.9
Pre boil volume (equipment estimates 4.55 g | 18.2 qt) 2 8
Boil off losses -1.5 -6
Hops absorption losses (first wort, boil, aroma) -0.05 -0.2
Post boil volume 3 12
Going into fermentor 3 12
WARNING: Kettle losses > 2% detected which throw off OG calculation for extract/partial mash recipes in batch target 'fermentor' mode. Solution: Reduce kettle losses, misc losses and hops absorption in equipment profile, OR set batch target to 'kettle' and do a full wort boil. See batch target FAQ.
Total: 1.96 7.8

Notes

Decided to keep this first brew simple and straightforward, no vanilla, 3 gallons, no primary to secondary transfer, conditioning in keg. This could be called the baseline wedding porter (BWP).
