Covered brew kettle with sanitized lid and a towel soaked in Star San. Left to cool on its own on counter. Will pitch on Monday and store cold until then. |

Started yeast on Thurs night, moved to fridge Fri night. Will use Mon night. Wake up by warming to pitch temp. |

Using small conical for first time. Very convenient small hole where airlock goes for placing siphon tube.
Pitched wort 72 hrs after brew day.
Dropped siphon hose tip on floor, re-sanitized but have bad feeling about this. Took wort stability samples 1. Pre Transfer 2. Post Transfer, Pre O2
3. Post Transfer, Post O2.
Wort temp at pitch was 55F, Starter Temp was approx. 65F. Set Freezer to 70F, will let free rise for 2 days. Then willl let rise further to 78F. |

Next morning, temp had stabilized at 68F. Some slight signs of fermentation, bubbles on surface. |

8pm - Fermentation was blowing out of airlock. Installed blow off tube. Put temp controller on 75F. Will let it rise at will. |

Tasted hydrometer sample. very dry, spicy, slightly sour? Very cloudy from being held at 79F for the last 7 days. Possibly infected and soured when I had to place the blowoff tube? My 3 wort stability samples are solidly not infected after 14 days. Touching the siphon hose on ground, then re-sanitizing seems to not have been a problem. |

Tasted hydro sample and was nice and spicy, very dry. Did I detect some sourness? Dropping temperature to clarify. Slowly 5 degrees per day.
Will drop down to about 40F. |

Kegged kicked last night. Maybe the best beer I have brewed, clean, spicy, delicious saison. I will be brewing a lower alcohol version of this. |
