Started steeping grains at 163° and left in for 30 mins. Didn't take a final temperature reading.
Ground water is currently 56° so took two turns in the ice bath. Pretty easy.
Put the late addition DME in at 15 mins, but since it wasn't boiling withhead the 15 min hops and Irish Moss to 10 minutes. Should be fine.
Otherwise, pretty routine brew session!

UPDATE: Let sit overnight to further cool before pitching yeast. Oddly, OG came in at 1.04, which makes no sense considering the amount of DME in it. I think stuff dropped to the bottom and made the top part lighter. Need to get a longer thief. For now, I'm using the 1.058 from the recipe as the OG so as to get an accurate ABV measurement.

Fermented like mad the past few days and just settled, so I figured I'd take a measurement and taste. Down to 1.01 already and still cloudy from the yeast.
Taste was okay... Fruity and bitter and a little weird, but it's young and hard to tell at this point. I think this should be a good beer. |

Racked to secondary and dry hopped with an ounce of Citra. Doesn't taste great -- bitter, yeasty and a bit alcohol-y. Guess I'll wait and see! |

Finally got around to bottling, which means it's been dry hopping for 16 days!
Surprisingly, it tastes really good -- fruity and a bit bitter courtesy of the amarillo and citra. Should be a good beer. |
