Split between 2 carboys. 5.5 gal in each. Oxygenated and pitched yeast at 50 degrees.
Definite mash temp snafu -- mashed at a *much* higher temperature due to a kinked HLT probe. Probably around 156 or so for a good 10 to 15 minutes. Will not do me any good on my final gravity. |

Hydro Sample measured 1.014. Starting diacetyl rest. Increasing fermentation chamber to 65F (18.3C).
No active heat in fermentation chest so it'll just freerise to 65 from ambient in garage.
Hydro sample did not contain any detectable diacetyl, but doing the rest anyway. Was pretty roasty, hopefully it's not too roasty once it's done and carbed. |

Degassed sample reads 1.013. Without degassing it was reading at around 1.015. I guess degassing your hydro sample is important!
Granted this sample was taken from the other carboy so it's not an exact comparison to the previous sample.
Going to cold crash tomorrow evening. Diacetyl rest should be complete but I'm giving it another full day.

Kegged carboy #2 into Keg #8.
Kegged carboy #1 into Keg #9.
Measured by weight. 42.35 lbs. Filled *just* passed the gas dip-tube! Be careful when tapping these. |

Keg #9 in kegerator. Clean, dark, light bodied, easy drinking. Gelatin in primary definitely worked. Perfectly clear. |

Tried a Kostrtizer Schwarzbier (bottled) against mine. The Kostritzer was much more malty and had more mouthfeel.
Mine is thinner and not quite as malty. I feel it could use some more malt presence.
IDEAS: Use equal amounts of munich (maybe dark munich) and pils. Maybe some melanoidin malt, a pound or so. |

Won best of show at Genentech HoHo. The second keg, after lagering for 6+ weeks, is WAY better. Needs the lagering. Now it's super smooth, good maltiness with roast level, and apparently award winning!
So... don't know if there were material differences between the kegs but the second keg was obviously way better tasting than the first.
IDEAS: Don't change anything and brew again, lager for 6+ weeks and see if it's the same! |
