Notes

A smooth, strong sweetish stout.

I started thinking about experimenting with very fruity hops (Nectaron, Mandarina Bavaria) in a stout to see what would happen, but the longer I thought about it and researched options, the more I've gone a bit more conservative with all Ella. It's given it a nice star anise / licorice flavour, which I'm really happy with.

Carafa II will drive most of the dark flavours with minimal astringency, or so I'm led to believe. Crystal will drive the sweetness. Biscuit is there to mimic Maris Otter without the price tag. Special B may bring some caramel, honey, biscuit, dark fruit.

Demarara unrefined sugar for priming should bring a little Caribbean feel and some caramel. I might even add some as a late addition to the boil.
