Notes

Goal is to make a wheat ale with moderate fruit aroma and taste, not just background flavor. Decided on wheat and sweet extracts to entice family members who are too fond of beer. Planning on splitting the batch in half, and making half cherry, and the other half with another unchosen extract flavor (blueberry maybe). Extracts added before bottling.

Went with 2 oz / per 2.5 gal of brewers best sweet cherry extract, 1 oz vanilla extract, 1 oz almond extract for the first half; may bump almond extract to 2 oz if made again.

Went with 3 oz / per 2.5 gal of blackberry extract and 2 oz vanilla for the second half of the batch.

Cherry was liked by many who do not normally like beer; blackberry came out with less strong flavor, but lingering sweet berry notes. Beer is medium bodied, lightly sweet, with no residual bitter taste, are are overall very inoffensive beers; both are delicious, and I'm going through them rapidly.
