Notes

Beer ended up light, crisp, and very dry. Over attenuation is still a persistent issue, regardless of mash temp. The triple decoction mash did not feel worth it. I didn't get any of those impossibly malty notes that German beers often have, so I don't think that's the way to achieve it. Going to start fermenting in a keg, so we'll see if completely sealed fermentation and closed transfer makes a difference.
