no matter how many times i have tried it, I could never get into collard greens. Looks good though!
It is sometimes an acquired taste for both grits and collards. I liked collards the first time I had them. How can you go wrong with marinating vegetables in hot pork fat for 24 hours?:) They are one of the few things we can grow in the sand in our back yard too. I used to pick them and eat them raw when we were growing them.
 
If you are on the chicken kick, go out and buy some pesto and cherry tomatoes. Pesto chicken is good and VERY easy.

Cant go too wrong with steak, but I am spoiled. Pans are for cheesesteak. Smokers are for just the steak I like to get a really thick steak, usually a Sirloin because anything else would be stupid expensive. A 2" steak in the smoker at 250 will cook a perfect rare/medium rare in 50 minutes.
 
I use a sous vide for all my steak now. Comes out perfect, but gray, so it gets finished either on the grill or in a pan. Even pork chops come out perfect.
 
I've been doing reverse sear for any large cut of meat. Started with pork tenderloin and it came out so juicy yet fully cooked. I don't have a grill or smoker, so my options are stove top only, oven only, or some combo, or the crock pot. Reverse searing has worked better for me than regular sear to oven recipes
