What are your favorite local/regional dishes?

I got one word for ya: Steak-umm. Thin as paper, beef (or at least beef-esque).

Some supermarkets will cut fresh meat on a deli-like slicer. Ask around.

Or use roast beef sliced in the deli.

Deli sliced is a must for that perfect Rubin, too. It is worth every cent for the perfectly sliced high quality deli meat. And, a buck to the slicer will make them remember you and that you appreciate their effort.

Primanti is the sandwich I believe you're speaking of
We ate at a Primanti Brothers back in November when we went to a Steelers game, didn't have sandwich though, had the burger which was exceptionally good!

I live near Nashville, TN, so there's a little bit of everything being a tourist destination. Hot chicken is probably what they are best known for, but there's a lot of great BBQ (mostly pork and chicken). Breakfast/brunch places take pride in their biscuits :)

Did ya sample anything from the Sheetz across the street? NOW THAT'S SOME LOCAL CUSINE YUNZ!

St Louis has toasted ravioli. Really good, dip it in marinara.

I'm in love with Boston baked beans. These slow-cooked beans are flavored with molasses and a variety of spices and are traditionally served with brown bread. Boston baked beans are a true comfort food. The slow-cooked beans are simmered in a flavorful mixture of molasses and a variety of spices, making them the perfect complement to a variety of dishes. One delicious pairing for Boston baked beans is air fryer pork chops. The tender and juicy pork chops provide a nice contrast to the rich and savory beans. The air fryer method of cooking pork chops also makes them crispy on the outside while keeping them moist on the inside, making them a perfect match for the soft texture of the beans. To make the dish even more satisfying, serve the pork chops and beans with a side of fresh brown bread, which is the traditional way of serving these beans. This meal is perfect for a weekend dinner or a family gathering, it's hearty and delicious.

Boston baked beans.
Are there's any restaurants in Boston that make baked beans for the rest of the world to taste?
I went to a restaurant in Georgia called Hominy.....there was nothing on the menu with grits let alone hominy and the server did not know what hominy was.
