Weiss bier (wheat to pilsner ratio)

Most Weiss bier recipes call for 50:50 wheat : pilsner malt.

Wanted to start a batch of Weiss Bier today and realized I only have enough wheat malt for 30% ratio. Any problem with that?
Have brewed standard wheat beer in the past with 10% wheat.
 
Likely you will have a different style, but still drinkable beer. If you are using Pale Wheat Malt, your diastatic power should be good for mash conversion. What brew method are you using? When I'm brewing with higher % of wheat, I use rice hulls to prevent a stuck sparge. I've done 100% BIAB wheat beers with high success.
 
Wheat at 30 percent is reasonable. Most of the flavor is coming from the yeast so you'll still have that. There is a flavor component that arises specifically from yeast interaction with compounds in the wheat but you should have that covered.Concerning mouthfeel and protein haze that can be impacted by percentage of wheat, you should be within a good range. If you feel the need for more wheat, add in a reasonable percentage of wheat flour. You'd definitely want some rice hulls for that, though. :)
 
No rice hulls needed in biab...

I've done a 100% wheat flour beer...
It's messy, but it did work (BIAB obviously).
May have to go back to that as my malted barley supplier is no longer brewing and out of stock
