I brewed an extract/steeped grain version of a Kolsch that turned out okay and was eager to do an all-grain as soon as I started using BIAB mashing. I tackled this one after I got a few mashes under my belt and it turned out really, really good!
I think it compares favorably to Reissdorf, the only import Kolsch I can get my hands on.
The malt seems just about right, though might do a step-mash next time. Also might try without the wheat, but there's not a lot and it doesn't seem to give it any chill haze or affect the flavor adversely. Could maybe try different hops, too, but I'm not sure I want to tweak anything.
I'm digging the K-97 yeast. It doesn't seem to be used much, but it's a winner.
