So I'm planning to revisit brewing hop water in the next few weeks and am wondering if there is any news on that front since 2023. I'll be bottle conditioning and will probably use molasses sugar in order to add some heft (hopefully) to the flavor, although what's not to like about making love in a canoe?

One question regarding the selection of hops, am I better off using a hops that is classified as aroma, as bittering, or both?

My opinion is not that of an expert; use with caution!
Aroma hops will give aroma, bittering hops just give (mostly) bitterness. I suspect that most hop water uses the aroma and not the bitterness.

I tried laganitus (sp?) tropical one and would brew that...it had that bubble gummy hop in it...very drinkable...very fruit soda-ie

I've updated my hop water recipe here:

Hop Water - 1% ABV

The magic number for bottle conditioning seems to be 20 grams of sugar per liter to get the right amount of carbonation.

I've made two 14 liter batches using dark brown sugar for one, and cane sugar for the other. The choice of hops really determines whether the mint tea is noticeable.

Which hops do you like best in this? I'm sort of on the fence on mint tea- I am trying to think of what hops I'd like with mint.

I'm not very familiar with all of the hops variants, but the main thing with hop water is that it tends to lack depth in flavor. I've found it helpful to add bitters or lime juice in order to fill out the flavor. One nice thing with hop water is that it's easy to do smaller batches, and it takes less time :)

Without the bitter krauter added, I find the Polaris hops to be like a punch in the mouth. With the bitter krauter that goes away.

I've also made another batch with Ekuanot and that is a lot smoother than Polaris, quite nice without any bitters added. So you might want to start with Ekuanot (Yakima Chief Ekuanot T90 specifically)
