Prickly Pear Sour!

Brewed this yesturday. Pitched sour pitch at about 38c. Starting OG was 14.7p, starting ph was 5.15 at knockout.

This morning ph was down to 3.35 and 14.4p Pitched 250g of voss and 88lbs of prickly pear!

Pretty cool color! Gonna be a pretty good sour me thinks!

Can not think what this would taste like. I like sours, but this might be too weird
 
I'm not a big sour fan, but if it is something interesting, I can do a 9oz here and there.
One of the breweries here was mixing a beer with 1/2 Lemonade Sour and 1/2 Session IPA a few weeks ago. It was different, but it worked.

Prickly pears have a fairly mellow flavor, a bit like watermelon. Think something like watermelon, lemonade, plus alcohol.
 
Imagine removing that many thorns Yikes!
I used to have one of those until the 2004 hurricanes. I don't even remember how much all that crap weighed after it fell and went to the yard waste dump. I know it was a lot. Getting the fruit was a royal pain in the ass between getting poked and having stickers left in my hand.

You can get this by the pallet. You can probably buy it in those large square totes if you are big enough! I know you can buy 55gal drums of a lot of the flavorings from amoretti.

@Donoroto yup its like a lightly tart melon flavor its pretty interesting honestly. the high quantity is because i was using actual fruit puree instead of a flavoring/concentrated puree. but also i dont think that i have the option of buying 22lb or smaller bags of the stuff??? i also got told by the boss to "make it pink" so i made it pink.

the Marzen/oktoberfest beer is very yummy and sitting at 5.7% and 73% attenuation. It may continue dropping a little but probably not a lot. hindsight i should have put .5lbs of midnight wheat instead of a full lb but the color may lighten up once it gets clear and cold. Might end up brewing the hefe again next week...feels appropriate. OR i could do a Helles....but i would need to get on the brew if that is going to happen.

@Sandy Feet they grow here in the dunes and in peoples yards. cool plants. but FUCK trying to clean and peal that many of them. plus there are several different colors/flavors of them(or different levels of ripeness IDK???). the ones that i got were labeled as ruby red. hence the bright pink coloring.

The voss dropped it from 14.4p yesturday morning down to 4.1p this morning! jackets were set to 40c and may have actually kicked on as it is at 37.6 this morning...wild.

it also dropped down to 3.11ph from 3.4 yesturday. a little vanilla and this will be a very yummy >6% abv sour.

ill likely crash it on monday and carb/pack it on Tuesday next week.
 
Yup, those things get big and like to fall when it rains a bunch too. I learned my lesson well: No more f ing cactus plants in my yard as long as I am in Florida LOL, and I'll probably die here because I hate real winters.

ya they are pretty stabby and will spread easily. they are cool to look at as long as you dont have to interact with them.
 
I won't be doing a sour, but you motivated me to go harvest some local prickly pears. Not sure if it's enough but I can freeze them.

Holy f*ck, one wrong move and you have a thumb full of micro needles. You need magnifying glass to see them. I nailed the top of my thumb and had to pull 8 of those suckers out. Last time around I burned the needles off the skin with a lighter, this time, I'm using a blowtorch. They're actually a pretty good for you fruit. If I get enough I'll add to a wheat beer.

do it! its a really nice subtle flavor. mine is not crazy sour but still a really pretty pink color. it will be lovely once it clears up!

my guess is that both the marzen and sour are terminal but i will probably leave them over the weekend to finish out!

marzen is at 5.7 and 74% atten. the sour is down to 74% and 6%
