Long Term Conditioning

Only beer I've aged is my 2018 barleywine it sits in a corney keg in my garage away from my keggerator so I don't touch it lol.

The beauty about keg bulk aging is you can draw a sample pretty easily (in winter anyhow) for sampling.

One thing I've herd about this aging stuff is as with wines Lambics ect is the flavour profile of the aged beer goes through a natural maturation wave of highs and lows.
E.g. say that 2018 barleywine is drinking fabulously atm 6/2020 maybe 12/2020 the flavour profile may change the ballance of flavours in the brew making it less appealing.
