I've tried a bunch of beers from the bock family and have really loved a few of the weizenbocks, like the Weizenhammer from Brooklyn and the Vitus from Weihenstephan.
As the Weizenhammer is the one that springs to mind the most, I'm trying a recipe that breaks from from the style by having an obvious hop flavour and balancing bitterness for the grain sweetness. I'm also dropping the specialty grains that are common in the style to keep it clean and relatively drinkable.
While that might sound like a big white IPA, I'm hoping for something that still has that obvious German sweetness, rather than the Belgian dryness. So I'm wondering whether the hop level is right, or maybe add some more grains to push it further along that bigger, sweeter beer scale.
Any thoughts?
