going to make a 10lt brew , going to use a kit beer, and i want to add some fruity flavours to it , what amount of water would i need to boil for 10min to extract flavour but no bitterness
You don't need to boil at all if you don't want bitterness. Just add your desired hops when your wort has cooled to 180 and let it sit for a while. Also, just dry-hopping is a good way to get hop presence without bitterness.
Hop bitterness comes from boiling. So just drop them into hot wort (to sterilize them). For 10 litres, maybe 10-30 grams? Depends on the exact hops and how much flavour is wanted.
You will still get some bitterness from adding hops after the boil, depending on the temperature and time. The higher the temperature, longer the time (to a point), and the amount of hops added, the more bitterness you will get. The software here will give you a prediction of bitterness measured in IBU's.
Note that even commetcial lighter lagers have a degree of bitterness, often between 10 and 20 IBU's.
