It has been a while since someone posted here, and a couple of beauties too!
 
I was playing around last week with what I call "Grandma Style" pizza.
Done on a sheet pan the way I remember homemade pizza growing up.
The main difference is this was a 3 day dough, not 3 hours like I got as a young boy.

you can't tell but both of those had cheese then sauce then toppings, keeps it crisper

A sheet pan... that is what my wife calls them, I was like "a what now" I always knew them as Cookie Sheets.

of course being close to New Haven we have our own style called Apizza
has to be brick oven to give it that crunchy edge
they use Romano cheese but they are more creative with the toppings
I've been using my stone in an Egg style ceramic wood grill to try and emulate it
I do also ferment my dough for a couple days using a good portion of Seminola flour and
a bit of olive oil

Although different regions use different names, typically “Grandma” pizza has no mozzarella cheese. With it, it is called “Sicilian” pizza. Grandma pizza can also be round. Chicago “deep dish” is similar to Sicilian, but the dough is oiled.
 
Never heard of grandmas pizza
I'm from The Bronx there it's sold by the slice
It's " let's go get a slice" very very thin
You flip the tip in and then fold it in half and walk
That's NY style didn't know about "Abeets" until I met my CT wife


Chicago pizza is weird
