hello from Iowa!

Better safe than sorry or have you had problems with only 2 packets in a lager?
I didn't. 2 is my normal go to in an ale, so I doubled it. It does start fast pitching that big.
Most of my ales are liquid, and the White Labs Pure Pitch is basically a double pitch as well. That shit is expensive, and there isn't any reason to use more than one in an ale with those cell counts.

Overpitching is simpler than a starter, fo' shizzle.
I buy yeast and bitterly cling to it until the very last minute so I end up doing starters quite a bit. I can already hear the howls of detractors, but it's worked for me and gets me stronger, faster fermentation. I still have a few that I need liquid yeast for - Alt being one.

And of course, my fastest fermentation to date: a 1.070 IPA with Voss Kveik and a starter. 32 hours pitch to cold crash.

Hmmmm, Dave is quick to finish...
It sure seems like it with everything but lager fermentation :-(
I guess some things shouldn't be rushed. I keep hearing that...

Oh! Are we talking about beer?
