...acidify the wort after the boil to pH 5.2. I'll give these a try as I continue my Helles tests.

As to Melanoidin, I've discovered once you get it in, it won't come out. I use it rarely, if at all.

And very much agree on the Melanoidin. Maybe a drop in a Scottish Ale or something, but I'm not inclined to use it at all.

I've been getting great foam with my step mash that's in my first post. I thought maybe it would suffer a bit after I changed my alpha rest from 30 to 15 min but it hasn't. I also remember reading something about a slow drop in temps to lagering can also benefit foam which I do as well.

Only brew ive.made lately thats suffered in head retention gas been my porter im not savvy in this darker department though next brew is going to be a choc coffie stout and i sure want a creamy head on this one so instead of single infusion mashing ill stick to a hockhurst mash schedule and see if that helps.
