I just found a can of Coopers Ale malt mix in a box of stuff I bought last week, it's still capped with instructions and yeast. It has expired in 2015.
I'm thinking of brewing it up just for fun!
What do you think?.......lol

Go ahead. It'll work...may not taste great. Nothing to lose. :)
The yeast may very well be viable but I'd proof it in some water with a little sugar to make sure it takes off before depending on it to ferment a batch.

Maybe I'll toss in some my leftover hops, add a little flavor. And maybe I'll leave it in the fermenter for a month or so

The coopers yeast is a cockroach ...i know the Coopers R&D guy left a pack in freezer for over 3 years and it still took off , depending which can it is it may be a blend of ale and lager yeast or an ale strain but either way proofing wouldn't be a bad idea
