I’ve seen fly sparge time range from 20 minuets to over an hour.
What is the optimum fly sparge time?

My rate is less. I do an infusion for dextrine rest and mash-out so my sparge on a typical 5-gallon batch (7 to 7.5 pre-boil) is around 13 quarts. Ideally, that takes at least 20 minutes before all the sparge water has hit the tun. Then it continues to drain slowly for another 10 minutes or so until the grain bed is relatively dry.I’m reading that a quart per minute is a good rule of thumb. Thoughts?
