Just put some carrots into a brine. I'll wait about a week to see where they're at.

I haven't tried them that way (yet)
I have pickled them in vinegar though and they are quite tasty. I used a potato peeler to make long thin strips
Curious to see how yours are going to turn out!
 
I love fermenting things at home! I even did two different talks at HomebrewCon the last two years on this subject. I do cheese (yes, a fermented product), kimchi, pickles, sauerkraut, and all sorts of veggies.

My motto is “if it doesn’t move, ferment it!”. :)

I like to add garlic and hot peppers to my carrots with the brine. Yours look great!

That's a good idea to mix things together. Its definitely cloudier and a ton of bubbles, I'll post another pic when I get home.
Really want to sample it now, but will wait at least a few more days
