Here is what I mean by 'Egg Drop Soup', what you might see for potential clarity with a really good (or even 2nd hotbreak) and how clear beer gets and compact the yeast/trub pile gets with a very slow and low crash: (note, pics 1 and 2 are from the same brew day, about 30+ minutes apart with chilling in between flame out and OG measurement) The 3rd pic is a different brew.

Thanks for the info. and pics. As it turns out I bought a new Wifi Inkbird yesterday when my 10 year old Inkbird failed.

Cool that you got one, not cool you had to!

Unless they've update the process with a new app, I had to use a mobile device to set it up. (you can still use it old-school with settings on the device itself, but no fancy scheduling.) Their app allows you to set schedules and other stuff for controlling it. I set mine to a temp 8°F less than where I was holding it, then again once it reached the target temp, and again, etc. I found it took the full 12 hours to get that low by chance any way, so I didn't go by time, but if you want slower, you might need to add a time component. I then had it hold at 30℉ after that. You have to program several separate trigger steps, but that isn't difficult.

For what it is worth, for me a cold crash is fast as possible to 34F.
Of course the Hefeweitzen does not get a cold crash.
