Not really... I did it once adding some home made banana bread to the mash or was it at flame out - I forget but!.... Woah! Talk about increased gravity! Excellent beer - haven't made it since though. a bit messy.
I would start with some biscuit or Victory malt for the bread like flavor. Not quite sure how to get the banana other than maybe some banana liqueur or banana extract. You'll also need to determine what type of non-fermentable sugar if you want to retain any sweetness.
Or mash a heap of bananas I think ive herd about the interwebs that there are convertible starches and maybe even some Amylase enzymes in them don't take my word for it though. Just putting it down...
