    Last pull of the bottom fermented pale. That was a tasty one. Brewing a kveik pale tomorrow, so should have beer on tap again by next weekend

    The only time I don't mash with a specialty malt in an all grain batch is if I withhold the roasted/dark malts for black lagers or black IPAs. "Cap the mash" if you will. Last few black lagers I've just done it all together so, I suppose my vote is useless lol

    It's rather good! Took my extract pale recipe and subbed carapils for the caramel malt, lowered the IBUs to 35, and all flavor/aroma/dry hops are noble hop descendants (strisselspalt and liberty). Fermented with 34/70 slurry at 60F and 12 PSI. It's bitter and crispy and tons of quasi-European...
