Notes: Bring 12L water to 72*C and add grains (preferably in a nylon bag). Adjust temp as needed to remain stable at 67*C for 60 min. Shift bag lightly as needed to ensure water has maximum contact with the grains. Prep sparge water by heating 10L water to 76*C. In final 5 min of infusion, raise mash temperature to 76*C for mash out. Lift grains from wort and place in large strainer above the kettle. In batches, slowly sparge the grain bag over the course of 10 min. Boil volume should be close to 22L after sparge. Top off to 23L. Following hop schedule as noted. Add DME at 30 min. Add LME at 15 min, followed by Irish Moss and Servomyces. Cool to <26*C and transfer to fermentor. Aerate and pitch 2L yeast starter. Ferment in primary for 7-10 days, transfer to secondary. Add pasteurized persimmon mash and dry hops in separate nylon bags. Ferment in secondary for 10-14 days or until desired flavor is achieved. |

Notes: 1. Steep grain in 1.5 gallons of water by heating slowly to 155, then shut off the heat steep for 30 minutes.
2. Remove grain from wort.
3. Add the fermentables along with 1/2 the Fuggles & 1/2 the golden hops and continue boil for another 30 minutes.
4. Add Irish Moss continue Rolling boil for 15minutes.
5. Add 1/2 the Fuggles & 1/2 the golden hops and continue boil for another 15 minutes.
6. Add Irish Moss and continue boil for another 15 minutes.
7. Cool the wort down as quickly as possible (I placed the pan (with lid on) in the sink, filled around the pan with ice and cold tap water. Being careful not to allow the ice or water to touch the lid, don't want to contaminate it now).
8. Pitch the yeast in 1/2 cup water & a couple tablespoons of corn sugar just to make sure its going to work. (I used Karo Syrup, didn't' t have dry corn sugar handy)
9. Pour wort into fermenter, use a strainer if you have one to catch the hops.
10. Fill with water (total wort plus water = 5 gallons)
11. Now is the time to get a sample to measure.
12. Pitch the yeast into the fermentor and stir vigorously for a minute or so to infuse with oxygen.
*Step 4 was a mistake. Shouldn't have done it. |

Notes: Grain Bill was derived from a Bloodline Blood Orange Recipe
Hops for the boil were a combination of what I had left from prior batches.
Added Citra for the Dry Hop.
Kumquats...Thoroughly rinsed and then soaked the whole kumquat in a One Step Sanitizer for about 5 minutes then used a colander to rinse them. Stored in the freezer to be added later. Added whole frozen Kumquats to the secondary with the dry hop in a fine bag. |

3/7/14 fully dry hopped and carbonated. AMAZING BEER! Roast level, sweetness, hop aroma and flavor... I love it. If you've ever wanted to drink a black SN Torpedo with a twist this is the one to brew.
1/6/2015 Re-brew with modifications. No issues on brew day. Bucket filled to top ring. Boiled 2 hours due to over vol. Mill was set to .25 to see if it made a difference. OG was 1.092. Color was lighter than expected.
1/22/2015 sample tested 1.021 for ABV of 9.3%. Beer had no aroma, weird. Dropped dry hops in a bag.
2/5/2015 Racked beer to keg, decided to add 1oz crystal, 1 oz magnum, 1/2 oz citra in a hop bag suspended in keg. Cranked the reg up to 20 PSI
2/9/2015 Beer not carbed yet, but the aroma and flavor is heavy. The bitterness is outstanding, color is actually just right. Looking forward to it getting carbed. Set reg to 45 PSI overnight.
2/17/2015 Finally got it carbed and everything evened out. Really nice malt flavor, hop aroma, and hop flavor. LHB shop gave it an outstanding review. This batch came out with a much higher final gravity than last time, but I like the balance the extra sweetness added. Very nice beer with full flavor and medium body with nice lingering bitterness. No alcohol heat in this at all, just smooth and rich. |

Notes: This brew was designed around what grains my local shop had in stock. The goal was a lightly coloured, high alcohol braggot (a type of barley wine/mead.) I wanted 2-row to be the main grain, & the Avangard pre-ground was on the shelf; a 20L Caramel/Crystal (they had darker) milled in the store was a last minute addition. I ended up using 4lb of raw buckwheat honey + 2lb or raw wildflower honey, which took this from pale to well into the amber. I did want Kent Goldings to be front, and chose the nugget just cause. Love me some 71B for most of my meads, so went there here.
3rd day gravity reading: 1.032 (current ABV ~13% per the Hall Equation.) Too much hops at this point.
9th day gravity reading: 1.030. Keeping it in primary, adding the red star now. Well, really the lees from my hydromel. Hopefully this kickstarts some fermentation. If not, I will try a champagne yeast. Hops are strong, but in a really good way—my hop-head sister will love this if I can get the FG down. |
