Notes: All Zythos-hopped sour NEIPA Saison, co-pitched with Goodbelly shots (or other Lacto). If you don’t want to use saison, then use your favorite usual sacc strain for NEIPAs (London III, etc), or use WLP 644 sacc trois. 20 IBU may be too much for the lacto, but I’m only going for a mild tartness here, not enamel-melting. Lower pH of wort to 4.5 with Lactic acid prior to pitching, to help pre-sour and with foam retention.
First dry hop is added immediately after active fermentation starts (day 1-2) for biotransformation, then removed as krausen dies down (day 4-5). Add Brett strain(s) and let condition warm for a few months. Then second dry hop added before packaging, and removed 3-5 days later. Then rack into keg (add more keg dry hops if you feel it needs it), carbonate, and serve! |

Notes: Went to Edisonian to pick up Grain and it was closed. Went to Libation Station and had to use Pale as the Base instead of Marris Otter.
Also changed the Hops and the quantity to use up some leftovers.
Had to use a different Yeast as well, Empire Ale instead of Wyeast Scottish Ale.
Cold Smoked 26oz of Pale for an hour with Pecan Wood.
Named Zwolf because this means 12 in German and that is how much everything cost me at Libation due to the Owner giving me an excellent deal!

Notes: For the 3rd batch, don't have the Carahell, but need to use the yeast. Will swap in carapils, cutting it from 1 lb to 0.5 lb and see what we get. Will also make water adjustments to make it drier and up the bitterness another 5 -10 IBUS. Running out of perle so might swap in something there too.
The BBFKL did a really nice job on this beer. I fermented at 60ºF under 15 PSI. I felt it was just a touch on the sweet side so adding 5 IBU to balance that out, but to be. honest this beer disappeared faster than any other beer I've ever made. Upped the bittering slightly and also a little bit more sulphate. Still not 1:1, but closer.
First time I made this I did a triple decoction as the recipe called for. It was a very nice beer, but a ton of effort. Gonna emulate that with some melanoidin and call it a day this time.

Put 3.5 Gallons in the kettle to mash in. Heat up 1.5 gallon of water to 170F to wash the grain ball after pulled from kettle. Add Palm sugar to wort while it is heating to the boil.
Should end up with 4.25 gallons to boil. This will leave 3.7 gallons for the fermenter.
