You'll probably make a good beer. For more english-like fruity esters i'd lean towards WLP002,005 yeast and a bit of medium crystal instead of aromatic.
If I used liquid yeast yes, but I stick with dry most of the time.
I use a couple crystal malts when I brew ESB.
 
I haven't used too many dry English yeasts. Fermentis S04 has been good. Windsor i didn't like the twangy off flavor but I've heard if you ferment it colder it's not present. I've made pale ale with Kolsch yeast before, and it is pretty neutral as you've noted. Beer was good!
