.38g per gallon for metabisulfite
.75g per gallon for sorbate.

Mix with a little water or mead to allow mixing in the mead.

Do the sulfite first, then wait 24 hours to add the sorbate. I wait another day or 2 to back sweeten.
 
Notes

6lbs of honey
fill to 5 gallons of water.
add yeast nutrient
stir vigorously to get oxygen into it.
add yeast, Red star cote de blanc.

Wait until you have FG of 1.000 or close to it.
Rack then wait a day or 2.
Sterilize with Potassium sorbate and potassium metasulfite.
wait a day then add the pink guava.
Let it sit for a day and taste, if you want sweeter, then add .5-1 pound of honey with a little water in a pan, you want the honey so it doesn't stick to spoon.

Give time for sediment to clear and rack again. the puree will leave a lot of sediment, you may lose 1/2 gallon of mead.

Give more time for sediment to clear or use fining agents.

Pretty highly carbed.

Tropical wildflower honey was used from Hawaii.
Cheyne backsweetened with mango blossom honey from hawaii. and using 1/2 gallon passionfruit as the puree.
