Notes
Modified method in Noma Guide to Fermentation. Using the SCOBY in the fridge.
Sugar syrup for maintenance 800g water/200g sugar. Boil, then cool. To maintain scoby or g-bug, add it to twice its weight of sugar syrup.
4L spring water total
- heat about 2L to a boil with 500g dextrose (or white sugar)
- add 8-10 bags black tea (to date english breakfast tea)
- cut back heat maintain brew @ ~190F
- let tea steep 20 minutes
- bring back to a boil then add:
-- 300g frozen blueberries
-- juice of two lemons
- simmer a while longer
- add 2L spring water to a fermenter, e.g. large glass open-topped cube
- once brew has cooled a bit, strain it to the container
- Add scoby when cool enough
