Notes

Mash in to 142 - 149f and sparge at 152 - 159f. Collect 5.5 gallons.

Kettle Sour with Omega Lacto Blend at 95f for 2 days.

Boil sour wort for 30 minutes and end boil with 1 oz of Galaxy in whirlpool.

Chill wort to 74 and pitch Where da Funk Brett blend.

Dry hop with 1 oz of galaxy for 3 days after primary fermentation is complete.

Add 12 oz of guava and 12 oz passion fruit in secondary fermentation. Allow to age for 2 - 3 months on fruit and for complex flavors and aromas to come through.

Bottle with DME into corked and caged champagne bottles.
