Notes

Set out to make a trappist beer, somewhere between a dubbel and tripel. The beer still turned out delicious but closer to a Belgian amber (think Rare Vos). This was after an early sampling of a not-fully-carbonated bottle though, so flavor will likely continue to evolve.
