Set out yeast

Bring 320 oz water to boil (four x 72, one x 32)

Slowly add half of DME and then bittering hops. Set 15 minute timer.

Slowly add rest of DME during last 5 minutes of timer.

Add about 4 inches of cold water to fermentor.

Cool to 150 with chiller, stop, and add whirlpool hops. Set 15 minute timer.

Continue cooling after 5 minutes. Should hit 93 as timer runs out.

Pour into fermentor, including all hop debris, and top off to 5 gallon mark.

Swirl fermentor well and pitch yeast.

After five days, add dry hops.

Transfer to keg after ten days and carbonate.
