Notes

Added just over 2 qts of prickly pear concentrate, started with 1 gallon of homemade prickly pear juice and boiled down to half in volume. Didn't use wort chiller, should have! Instead I just threw it in the primary with an airlock and let it cool down to room temperature overnight before pitching yeast. The beer came out ok, not too much prickly pear character. However by choosing not to rapidly chill down the wort it gives off a vegetable-ish flavor that dominates the prickly pear flavor I was trying to achieve. Next time I'll totally take the time to chill the wort.
