Notes

Make 2.5 gallons of hard cider. Stabilize and then blend with 2.5 gallons of unfermented cider. This should provide some sweetness from the unfermented cider, but not too much that it's cloyingly sweet.

Blend the cider and beer together and keg so the cider doesn't ferment.

Edinburgh yeast chosen for the malt/sweet forward outcome. This should help provide a high caramel flavor from the beer side.

Calypso hops chosen for the apple/pear fruit flavors.
