Notes

Plan:

Put LDME in hot water bath
Add 4g of gypsum 2g salt
Bring 5.5 gallons water to 65C
Add steeping grains to sock and put in water, 30 minutes at <76C
Remove bag, put on strainer over pot to drain, bring wort to boil
Add 1oz cascade @20
Add half whirlfloc tab @5
Add 1oz Willamette @5
Flame out
Add LME and stir through
Siphon hot wort to cube
Top cube up with water to 5G
Seal cube
Get cube down below 90C (stop AA isomerisation)
Wait till morning...
Aerate wort and pitch W-34/70 @ 17C
Leave cube to ferment @17c
When activity ceases raise temp to 22C and add 1oz Simcoe dry
When FG stable crash to as cold as we can get
Add gelatin (1/2tsp dissolved in 1/4 cup water)
Rack into bottling bucket with priming soln
