Recipe correction needed as original 7.9 gallon collected is too much. Only need to end with 5 gallons in the keg. Instead of 31.6 qt I am logging 28.8 |

Fermentation did not start as of 7am the next day. Temperature outside the carboy is 58 degrees with 66 degrees inside the carboy. I pulled out some frozen bottles to bring up the temp.
Will possibly need to get another pack of Wyeast 1056 today and repitch. |

AM: Fermenting appeared to be reduced on activity. Temperature is 64.9 inside the carboy. 63 outside. I will look at increasing the temperature Thursday if fermenting has reduced.

PM: Brewing notes. The fermenting appears very strong for a non starter batch. Not sure why its strong, maybe due to the ideal fermenting temperatures or just a larger yeast batch. The FG should be pretty low. |

transferred first to wide mouth bubbler, which had a leak. then moved into blue carboy. When i transferred out of the wide mouth, i had the airlock on the top with sky vodka in it. the suction from the bubbler tap pulled down half the vodka. Not much to be concerned, but if this is magic, secret ingredient! Anyway, i took the sample and tasted. Really good. No off flavors at all. The blue carboy was well rinsed and then dosed with star san.
I will wait till 1/14/2016 to add dry hops which will stay in the carboy for 10 days while we are in belize |

Added 3 oz of dry hops in a sanitized mesh bag. The hops will stay in the bag for 10 days.
The house temperature was left at 67 degrees.

Kegged today. Overall the transfer went smooth. The smell of the beer was really nice and worth the 10 days of dry hopping. Lets see what next week brings.
The keg temperature is in the cool bag. Currently have it at 60 degrees and 23.1 psi to get the 2.5 recommended volumes of CO2. Going to keep it at this level or lower based on chill temperature for the next 5 - 6 days.
The weight of the keg with this amount of beer is 47.6 lbs. Pre weight check of the keg not taken. |

I cooled in the brew bag to 41 degrees F. Bought the 12 ft tubing from the brew store and then poured. This beer has some kick to it. Carbonation tastes fine. Maybe i am used to 39 degrees. Anyway there is a real kick from this beer. 2 * 9 Oz glasses and there is some buzz.
There are no off flavors in this batch. 4.9 gallons of goodness. |

The IPA has been carbonating for over a week and a half at 45 degree F in the second bedroom. With the 12 ft tubing the pour is great. Overall taste is very smooth, no off flavors.
