There was a temperature differential of about 3 degrees between the top and bottom of the mash. Mash started too cool, which may increase fermentability of wort and result in a thinner higher alc beer. Next time, after dough-in keep the temperature set a couple degrees above desired mash temp. |

Pitched yeast the next morning. Added 10 drops of fermcap after about 9 hours (concerned about blowoff levels). Blowoff bottle was bubbling by night time. |
