Cold crashed overnight to ~45F.
Aerated with the Persian Shake.
Pitched 150 gm of thick slurry (~300B cells).
Set fridge at 50F. |

Rehydrated 11 gm of Saphir pellet hops in ~3/4 cup of water (boiled in microwave for a minute or so to out gas, then chilled). After sitting for a few minutes, the grassy, harsh notes dissipated. Added the slurry directly to the bucket at 61F. |

Dosed with 1/4 tsp of gelatin (rehydrated in 1/4 cup of 150F filtered water). Let sit at keezer temps until it's convenient to carbonate. |

After a touch more CO2, the beer was more balanced. Still is a bit sulfury and has almost no hop nose. Good lacing, firm bitterness, decent clarity and balance, buthe still has a touch of a funky finish. |
