Notes

Decoction mash. Mash in grain to 5.5 gallons of water at 109 degrees. Slowly over twenty min raise the temp to 122 degrees. Pull 2 gallons of mash to second kettle and bring to boil. Boil for 30min. Add boiled wort to mash tun and rest for 60 min. Fly sparge out very slowly with 5 gallons of near boiling water. Should end up with 8-8.5 gallons in the boil kettle. 90 min boil to end up with 6.5 gallons left in kettle. Should be around 5.5-6 gallons into the fermenter.
