Notes

1L yeast starter: 24hr at 70F on a stir plate, then refrigerated for 6 days before pitching. No reason for the 6 day hold, I just didn't get around to brewing that weekend.

Protein Rest: Mash in only the pale rye malt at 130F for 25min. Remove bag, bring water to mash temp, then add all other grains. Mash for 60min. Add many fistfuls of rice hulls.

Fermented for two weeks, cold crashed for 24hr, bottle conditioned.

Better efficiency and lower FG than expected. Recipe adjusted to reflect results.

2023 War of the Worts silver medal winner, 2nd out of 18 entries for Wheat/Hybrid Beer. 42 point average. 2nd place in 2023 first round National Competition at Philadelphia. 27.5 score in the final round, judges claimed soapy taste and low body. Suspected fatty acid breakdown over the ~6 months between competitions.

Suggested improvements: Increase amount of finishing hops or move to whirlpool instead. Reduce Dutch malt to ~10%. Try using WLP380 Hefe IV for more clove/spice over banana. Adjust recipe for realized abv, drop it down to ~5.5%.
