Infuse to 131F, rest 5 min
Infuse to 145F hold 30
Infuse to 154F, rest 20.
Pull decoction, heat to boil.
Add Carafa I to main mash.
Return decoction to get 170F. Recirc and lauter.
Boil 1 hour.
OG 1.053
Pitch 2 packets direct to each 5 gal fermenter.
Excellent Dunkelweizen, Nice body and foam. More clove than banana.
