Hi All
I been using Voss Kviek yeast a few times, as you all know its very fast, but I dont like the side tastes that come with it .
I was recommended Saflager s-189 so Ive tried it and it finished fermenting in 4 days Fg 1.000 from SG 1.046.
Is that normal to finish so quickly ? bearing in mind I live in thailand and I struggle to keep the wort cool its always around 24c.
best regards
Windy

Some yeast will finish that fast with the right conditions. I have had us-05 go that fast. But remember there are other processes going on even after the FG is hit. Let the yeast finish up before bottling. I always give it at least a week to 10 days

That seems very low!
I don't know that specific yeast though. But a hydrometer reading of 1.000 would mean no sugar left at all. Sounds more like a wine reading.
Could you have an infection? Or faulty hydrometer?

Wow, that is very fast and very low FG. My guess is contamination by something other than S-189. Have you brewed any Belgian style beers recently?

no i sterlize all equipment with the fermenting bucket and sanitize it, Idont know how it has been contaminated, ,but I ll find out when i next open the bucket for bottling the brew

Time for a taste test.
At 24c that yeast would of been hooking along.
At that low FG yup be nervous on contamination as others have said.

Have a taste and let us know what you think.

At 24 C, 75ish F, you may on the high side for an ale yeast where you will get a quick fermentation but fusells and other off flavors as well. I would stick with the kveik but maybe go with a different strain...I can't help to keep being impressed with the A44 blend that Imperial makes..it's very clean ....make use of your higher temps!

I am in a similar temperature situation (except maybe more fluctuating) and I found a number of yeasts that should work. Mainly Belgians, not all diastatic, but also S33, S04 and T58

You could also try pressure fermenting.....that will allow you to ferment at slightly higher temperature while minimizing off flavors (esters) from the yeast.
